2011 őszén Tóth Marci Belgiumban járt. Belga pékmesternél, az ő műhelyében indította el saját kovászát. A hosszú hónapok alatt megőrzött, életben tartott kovász lett aztán az alapja a Bécsi úti műhelyünkben az első tesztsütéseknek. Azóta is ezzel a kovásszal dolgozunk, ami liszten és vizen kívül mást nem tartalmaz. Sem a legelső pillanatban, sem azóta nem került bele élesztő. Lisztjeinket három hazai malomtól szerezzük be.
